Fish market: steady growth in demand despite difficulties

17 February 2025

ROMIR research. Despite the difficulties that the fish industry has faced this year, there is steady growth in demand for red, smoked, lightly salted and salted fish. The reduction in the difference in cost between red fish and dry-smoked/dry-cured sausages is due to two main factors.
Firstly, the active development of promotional campaigns in the category contributes to the formation of attractive prices for the consumer.
Secondly, the targeted search for suppliers offering affordable alternatives to red fish (pink salmon, char) has a significant impact on the average cost of products.
Thirdly, the active development of private labels in red fish, the unique selling proposition of the chain.
It is important to emphasize that, despite these factors, the average bill for fish is still 61% higher than for dry-smoked/dry-cured sausages.
This indicator indicates a high demand for the fish category among consumers and confirms its importance for retail chains.
There is an active transition of consumers from various types of delicacies, sausages and hard/semi-hard cheeses to fish, which indicates a stable trend in changing consumer preferences.
For example, Russians definitely prefer a sandwich with red fish for breakfast rather than with sausage.
